Gooey Lemon Cookies

Ingredients

  • 2-1/4 cups all purpose flour

  • 2 tsp baking powder

  • 8oz package of cream cheese

  • 1-1/2 cups granulated sugar

  • 2 tbsp lemon zest

  • 1-1/2 tbsp lemon juice

  • 1 tsp vanilla extract

  • 1/8 tsp yellow gel based food coloring

  • 1 tsp salt

  • 1 egg

  • 1 yolk

Directions

  1. Whisk together flour, baking powder and salt.

  2. In a separate bowl cream butter and cream cheese together until smooth.

  3. Beat in sugar, lemon zest/juice, vanilla extract and salt. Beat until light and fluffy.

  4. Add egg and yolk and beat until creamy and light (1-2 minutes.)

  5. Add flour mixture and mix until well combined.

  6. Cover and refrigerated for AT LEAST 2 hours!

  7. Preheat oven to 325° F and line baking sheet with parchment paper.

  8. Roll ~1.5 inch dough balls in a bowl of powdered sugar and place at least two inches apart.

  9. Bake for about 14 minutes until puffed and crackly. DO NOT OVER-BAKE!

  10. Taste the deliciousness.
