Gooey Lemon Cookies
Ingredients
2-1/4 cups all purpose flour
2 tsp baking powder
8oz package of cream cheese
1-1/2 cups granulated sugar
2 tbsp lemon zest
1-1/2 tbsp lemon juice
1 tsp vanilla extract
1/8 tsp yellow gel based food coloring
1 tsp salt
1 egg
1 yolk
Directions
Whisk together flour, baking powder and salt.
In a separate bowl cream butter and cream cheese together until smooth.
Beat in sugar, lemon zest/juice, vanilla extract and salt. Beat until light and fluffy.
Add egg and yolk and beat until creamy and light (1-2 minutes.)
Add flour mixture and mix until well combined.
Cover and refrigerated for AT LEAST 2 hours!
Preheat oven to 325° F and line baking sheet with parchment paper.
Roll ~1.5 inch dough balls in a bowl of powdered sugar and place at least two inches apart.
Bake for about 14 minutes until puffed and crackly. DO NOT OVER-BAKE!
